Fagopyrum esculentum - Approx. 40g.

Buckwheat is a fascinating and ancient crop.

Commonly used as a green manure due to its ability to suppress weeds, improve soil fertility, as well as support pollinators and honey production.

This fast-growing annual is best suited for summer use as it is frost sensitive. If growing as a green manure, the crop should be incorporated into the soil before it goes to seed.

Alternatively, if you allow the seeds to ripen, it is possible to dehull and mill the seeds to make flour (although we have not tried ourselves). Buckwheat flour makes particularly tasty pancakes (Breton gallete).

The Culinary Breeding Network have made an excellent Buckwheat zine which is well worth taking a look at.
