GROWN IN SCOTLAND by Seeds of Scotland

Pastinaca sativa ~ approx. 250 seeds

A vigorous parsnip variety producing creamy-white, tapered roots around 25–30 cm long. Adaptable to a wide range of soil types, Everton is an excellent choice for Scottish gardens. It can be left in the ground over winter and harvested as needed— frosts even improve its flavour by converting starches into sugars.

**Handle the foliage with care, as the sap contains natural compounds (furanocoumarins) that can cause skin irritation when exposed to sunlight.

 

Growing Info

Sowing: Parsnips need a long growing season, so sow directly outdoors in late April or May once the soil has warmed. Sow seeds in drills 2.5 cm deep,

Spacing: 15cm

Harvest: Harvest from October to April as needed through the winter. In very wet conditions, lift the roots, remove the leaves, and store them in dry sand in a cool shed.

Tips: Germination can take over a month in cool soil, so resist the urge to sow too early. Parsnips are a great crop to interplant due to their slow growth. Try sowing quick maturing crops such as lettuce or radish between your parsnips.
